Light to middling, bright yellow colour, with a bouquet of creamy iced pastry, meringue and toast, croissant and light nuttiness. The acidity and phenolics combine to provide a firm and slightly astringent after-grip.

The appearance is crystal clear with an ultrafine and persistent bead, medium straw with a yellow gold hue. A mature and complex style of sparkling expressing aromas of toast, honeycomb, sourdough and nougat.


An intriguing blend of flavours, including lemon curd, natural yogurt, brine and a hint of forest floor. The palate has great elegance and poise with a finely balanced dosage or sugar, acidity and tannic structure.


The 2006 wines have developed great complexity, character and have retained a strong natural acidity and vibrancy. They will be remembered for wines expressing the fullness of character of a warm spring and sunny autumn conditions.
